how to cook your frozen dumplings
pan frying:
Choose a non-stick pan with a lid.
Add some neutral oil to the pan and spread it around as much as you can. About 2 tbsp for a 12-inch pan, but feel free to adjust to your own preferences. You can also use spray oil.
Arrange the dumplings in your pan flat-side down.
Add around 2-3 tbsp of water to the pan, then set over medium to medium-low heat (err on the lower side if your stove runs hot) and cover. As the pan heats up, you’ll start to hear the water bubble.
Let them cook until the water evaporates, around 8-10 minutes. Listen for the bubbling sounds to stop, which indicates that the pan is dry and the dumplings should be getting crispy on the bottom. Lift the lid to check, if the pan isn’t dry yet, cover again until it is.
If this is your first time, check on them periodically and/or adjust your heat level to avoid burning.
If they’re not fully cooked on the inside yet, add more water and cover again until the pan is dry.
Remove the lid and jerk the pan a little to give it a good shake. If the dumplings are done, they should unstick easily with a shake or by nudging with a spatula.
boiling:
Bring a pot of water to a boil.
Add your frozen dumplings and stir so they don’t stick together.
Boil for around 8-10 minutes.
steaming:
You will need:
a pot with a lid for boiling water and a metal steamer that fits inside
OR
a pot for boiling water and a bamboo steamer with a lid (the steamer should fit inside the pot or very snugly within the outer edge of the top)
round perforated parchment paper that fits your steamer option or napa cabbage leaves
Bring your pot of water to a boil. The amount of water will vary based on which steaming setup you use. Use enough water that will last you for steaming 8-10 minutes, but make sure the water is never high enough to touch the dumplings.
Place a piece of parchment paper or enough napa cabbage leaves to cover the bottom of the steamer. This will ensure your dumplings don’t stick to the steamer.
Arrange your frozen dumplings on the steamer, making sure you leave space between each one. When cooking they will expand and you don’t want them to stick to each other.
Place your steamer in or on top of you pot of boiling water, and cover with the lid.
Steam for 8-9 minutes.
